Broth and Ingredients

Good ingredients, left as they are. That is the philosophy of Wonjo Kkori gomjip.

We do not simmer the beef bones for long. We cook them only until the good flavor comes out, then combine that stock with the oxtail broth. We claim no secret recipe.

The meat is soaked in cold water to draw out the blood, and while it simmers we keep skimming off the fat that rises.

Our rice is Samgwang rice from Gyeongju, cooked with a little glutinous rice and a touch of black rice.

Our kimchi is made every Tuesday with Cheongbang napa cabbage.

We keep the taste the same while continuing to raise the quality of our meat and produce.

History

Since 1980, we have been making oxtail broth at the same spot, 52 Oncheonjang-ro.

We source the best ingredients we can find and simmer the meat together with beef bone broth.

Having tasted oxtail soup at restaurants across the country, we now carry the restaurant forward as its second generation.

Before Wonjo Kkori gomjip

Our founder first learned to make oxtail soup in the kitchen of an oxtail soup restaurant in the Chungcheong region. He often recalled seeing the President visit that restaurant.

In the 1970s he moved to Busan and opened a small oxtail eatery in Bujeon-dong, without even a sign.

Timeline

  1. 1980

Moved to the Galbi Alley in Oncheon-dong, Dongnae-gu, at what is now 52 Oncheonjang-ro, and took the name “Wonjo Kkori gomjip.” Oxtail was still unfamiliar in Busan, and we began introducing oxtail soup to the city.

  2. 1990s

The height of Oncheonjang’s nightlife. Entertainers performing at the Carnegie and Big Town nightclubs used the restaurant almost as their green room, and many couples chose it for their wedding receptions.

  3. 2000–2020

Through Oncheonjang’s ups and downs, we became the last restaurant still standing in the Galbi Alley.

  4. 2022

Selected as a Baeknyeon Gage (Long-Lasting Small Business) in the first round of 2022. On May 30 we received the certificate (No. 220202-00078) issued in the name of the Minister of SMEs and Startups, and on October 14 the Busan Regional Office of SMEs and Startups held the plaque ceremony at the restaurant.

  5. 2024

On June 7, registered the trademark “원조꼬리곰집” with the Korean Intellectual Property Office (Registration No. 40-2205679, Class 43).

  6. Today

The founder’s eldest son and his wife run the restaurant as the second generation, with an unchanging taste as their first principle.
